First off, he's a chef. A proper chef's knife is sharp enough to shave with. Secondly, squid flesh is remarkably easy to cut. But super rubbery and almost impossible to tear.

I catch these squid all the time and they always have that plastic looking spine in them. I always keep them and they seem to never biodegrade or break down. It’s pretty much plastic and feels and sounds exactly like it. Crazy!
They are one of the world's best I beleive. After swords were outlawed a long time ago, sword makers would've gone out of business. But they didn't, they began to make knives, sciccors, shears, etc. Pretty cool if you ask me. ^_^
Damascus steel is what most quality Japanese knife makers use. Go German (i.e. Wüsthof) knives for durability go with Japanese (i.e. Shun) for crazy sharpness.
I mean, it was fascinating to watch. Now I want squid...but, not sure I want the sashimi. I haven't had an squid sashimi I've liked (it's great cooked, though I wouldn't know about Diamond Squid), but octopus sashimi is good (I find I like cooked octopus less, if the sashimi is good quality, funnily enough). Actually squid is very easy to cut, it's quite similar to the texture of a very hard gelatin. His knife is still sharp tho
Any knife can be that sharp, you just have to know how to sharpen them and do it regularly. Better quality knives just keeps the edge longer

This is a very well-explained video about how to cut a large squid. I'm still confused as to why everyone is getting recommended this... must be because it's 2am... I mean me, I know why... I'm learning how to cook, I'm a fan of gastronomy and I'm trying to learn Japanese... but I'm not sure how everyone else got here.
